 Duck frying

My family and I have a "friendsgiving" this weekend.  I elected to deep fat fry a small duck, I did not want to step on the turkey roasters toes by frying a turkey.  I love roasted duck has anyone here fried one before?  If so how was it?  Also if you have never had deep fat fried  turkey before I HIGHLY recommend it, it will change your life!

I've never done it myself but have had it and was fantastic.

From what I remember you have to puncture the skin and fry it at a lower temp than turkey. Duck has a lot higher fat content so guessing the puncturing helps remove some of the fat

Let us know how it goes, sounds amazing.

My favorite turkey ever was a deep fried one a few years ago. My father inlaw did it, and I am not sure what temp, but man was it incredible.

It is crazy good. I brought a fried turkey to a potluck family Thanksgiving and it was GONE, The roasted turkey that was there was hardly touched.

I felt proud and bad at the same time so I thought I would do something different this year.

Deep Fried Turkey is much better than one cooked in the oven.

Well fried the duck this evening, It was just ok.

The meat of the duck was cooked long before the super fatty skin fully rendered and crisped up.

It was still good but did not compare to a fried chicken and turkey.

I think I will save ducks for smoking or roasting, they seem to perform better there.

I smoked a turkey for the first time 3 years ago. It was soo good that my family wont let me cook it any other way.

I follow this guy, Malcolm Reed, and his youtube videos for a lot of my smoking. He's a competition cooker and knows his shit so I dont try to get silly when he's got it all laid out. I may change up the spices but his recipes are the bomb. I use is for the smoked turkey as well. It's a week long brine before it goes in the smoker, so its a little work but its worth the hassle.

Check him out sometime. He uses a crap ton of different smokers, but I have a pellet as well, a traeger, and his videos work fine for me.

I heard that only happens if you try to deep fry a frozen bird. Has to be good and thawed.

Yep, if you let the oil get way to hot it can sorta boil over too.
