Yeah, I try to keep it around there. It's tough with the charcoal. Especially because I have crappy menards charcoal.

I can attest that it was amazing! I used a bit of Hickory, but mostly I used Apple wood. I planned on using Cherry, but apparently I was all out.

I think next week I'll smoke a Turkey or chicken. I forgot how much I enjoy the process. Plus it gives me an excuse to have a few beers during the day.

Yeah, I usually use apple/hickory for pork, mostly apple. I just like that the best. I'm jealous. I may have to smoke something soon. Damn I'm starving!

I make a few batches a month... Good ole Hickory and Mesquite, trying to get some ideas for something different, was seeing if anyone had any recipes..

My buddy makes jerky all the time, Haven't gotten into the hobby yet, but I will.

I am either doing ribs or pork butt this weekend on my smoker. Haven't decided if I want to invest an entire night into a pork butt yet or not. Supposed to be 94 degrees tomorrow, yuck!

You suck!  I'll trade you.  We had snow in the Sierras yesterday.  Enough to cause major traffic accidents and a fatal over Donner Summit.  Cold and rainy here on the valley floor with a high of 46 degrees.  Snow came down to 6000ft, we're at 4900ft.  Not much, just enough to mess up the roads.  Here's our overnight low from last night.  Thankfully, it's supposed to start warming up again this weekend. Sorry if the pic is blurry, I must be still shivering. grin

I've been looking at those too.  I've been told to not get the ones with the glass window.  They cost more and in no time the glass gets smoked over to where you can't even see in them anymore.

It was fabulous..

For anyone that wanted the recipe I did here it is:

Herb butter = 2 sticks butter, rosemary, thyme, basil and tarragon all cut up. Mix together with a splash of olive oil

Cut slits in the prime rib and put in slivers of garlic. Salt and pepper the meat then slather with the herb butter. *Save some herb butter for the board when you cut after it is done (trust me this is key)

Smoke at 325 until internal temp of meat is 125. Let rest 15 minutes (in foil), put butter on board and cut. Comes out medium rare (like above pic), that's the way I eat my meat so cook a little longer if your one of those that like you meat really dead.

** Only thing I would change is I love garlic, so does my fam, so next time I might add some minced garlic in my herb butter to give it a little more profile in the flavor.

Up at 3 am cause I have 13 pounds of pork on the smoker.. Low and slow baby.

I tried my own rub and sauce this time (instead of buying store bought), but I have always followed this guy for my pork butt and brisket recipes. If you haven't checked him out he is worth a follow, he has tons more videos out there.

For me I think the key thing I got from his pork butt process was wrapping at the 160 mark. I promise you once you do that once your never going to not do that from here on out. It makes a huge difference in that bark.
