Smoking a 17 pound pork butt all night for my local league so we can go over our bylaws today. I can barely wait until 6pm. Anyone into smoking meat? Doing a brisket and ribs next week with my old man, love it.

Going to a friends house today for smoked chicken in their smoker. We want one but dont have one but we need one and should get one but we havent yet because well there is really no reason why we havent so I guess I will get looking for one.

I hear it is the easiest way to cook the best meat.

Is there anything when purchasing a smoker that is necessary to have or do they all work the same?

Can you smoke turkey at Thanksgiving or is that something that doesnt work?

Nick how do you prep your ribs. I'm a smoker as well. I make my own bbq sauce and memphis style rub.

Here's how I do it:
Take off the membrane on the back.
Cut the ribs into 5 bone portions.
Fill ziploc bags with the 5 bone portions, add ginger ale refrigerate 24 hours.
Take them out, dry them off.
Put the rub on some and bbq on the others. Wrap the ones with the rub in saran wrap, wrap the ones with bbq in tin foil. Refrigerate again 12+ hours.
Take them out, preheat smoker to 225 and use applewood and fill the drip pan with apple juice.

Rotate the racks every hour, until the bones wiggle a bit, take them out and enjoy!

(Preferably with a Surly Furious or Surly Todd The Axeman-seasonal)

Sounds close to what I do although I do not cut the ribs, I smoke them whole. I rub them the night before, and let them sit in the refrigerator.

Smoke at 225, but I use the 3-2-1 method. I smoke for 3 hours full racks, then take them out and wrap them in tinfoil. Back in the smoker for 2 hours, then I take them out and throw them on the grill with BBQ sauce about 20 minutes a side just to get that bark on the ribs.

Smoked some food yesterday for NYE.

6 racks of ribs.
15 pound pork butt.
13 pound brisket.
15 pounds chicken.
4 large salmon.

Incredible. LOVE IT! Feasted for dinner and it all turned out pretty good.

Get a decent size one. It will kill you if you like it and you don't have enough room to make things for your family with it. We had 3 smokers going yesterday, and two of them were electric. No shame in that at all.

I have heard decent stuff on the pellet ones, but I use wood. It is very easy.

You know what, I recently towed a guy that was born & raised in Tennessee and all they did his whole life was smoke meat.  He lives up here now and everything he smokes now is with an electric smoker.  He felt ashamed at first as he felt like he was cheating. laughing  But he says it's the way to go.  The main thing with electric is that it's easy to control the temperature.  He told me not to buy the ones with the windows.  They cost more and the glass get caked with smoke and pretty soon you can't see anything anyway.  I haven't taken the plunge yet, but I told my wife, if the backwoods Tennessee guy told me to go with electric, that is what we're going to buy.  vote yes

Yeah we started with a propane one. There really isn't much difference, I just thought it was a bigger pain in the ass and slightly more expensive to burn 3/4 of a tank of propane rather than plug in.

They are all good in my eyes, and produce yummy meat.

I have never used the pellets in my smoker, I have always used chips. My cousin uses pellets all the time and he swears by them. Call me "old fashioned" but I think the raw wood is the best to use.

Also, I have only been using Mesquite with everything I smoke. I think the flavor is much better than hickory.

Yeah, my dad is in the process of getting a pellet smoker. Some guys love them, some guys hate them because of the cost of the pellets. I prefer wood too. I use all different types depending on what I smoke. Ribs are Apple and Hickory. Man I want to smoke more.

You know, I have always wanted to make my own BBQ sauce, but have never done it.

I do have a kick ass rub that I make. I use it on my ribs, and pork butts. I got it from googling rubs, and tinkering with it through the years. It is bold with a little kick.

Didn't inject. I should try that sometime. The wife and I love the Famous Dave's Rib Rub. Also it's easy because I don't have to mix things to create my own.

Well, I thought it was boneless when I bought it, but when I opened it up this morning I realized it was bone in.

Ahhhh. Benefits to both. Usually bone in is a little bit more fatty, but depending on how long you cook it the more that fat will render in. I prefer boneless. Man I want pork butt now. Share pics!
